Abstract Freshwater eels remain one of the world's most valuable cultured fish species, with an annual production of over 100 000 t. Japan has been to the forefront of this culture with a history covering 100 years. As a result, the standard texts on eel culture are by Japanese authors. Bernard Gousset is a French fisheries scientist who has published on comparative culture techniques of the Japanese eel {Anguilla japonica) and the European eel {Anguilla anguilla) in Japan—his background enables him to provide an objective insight into an industry which has had to break away from many long-established practices to survive both increasing competition from neighbouring countries and the constraints imposed by shortages of suitable sites, water, and glass-eels.
